White Cheddar And Chipotle Mashed Potatoes |

Mashed potatoes with a twist. Ingredients:
2 1/2 pounds russet potatoes, peeled and cut into large pieces |
4 garlic cloves, peeled |
1 cup sharp white cheddar cheese, grated |
1/2 cup cream |
2 tablespoons chopped chipotle chilies in adobo sauce |
2 tablespoons butter |
salt and pepper |
Directions:
1. Boil potatoes and garlic in large pot of salted water until potatoes are very tender, about 20 minutes. 2. Drain them and then return to the pot. 3. Mash and then immediately add the cheese, cream, chilies and butter. 4. Continue mashing until smooth and cheese is melted. 5. Season to taste with salt and pepper. |
