White been and Tomato Soup With Orange and Mint

The oragne and mint work together to complement the tomatoes, and the beans add just the right amount of texture to this soup from Syria.
Ingredients:
1 teaspoon olive oil
1 cup chopped onion
4 garlic, gloves crushed
2 cups vegetable broth
2 (16 ounce) cans tomatoes, chopped, undrained
1 (19 ounce) can white beans, rinsed and drained
orange peel
1 teaspoon dried mint
1/2 teaspoon sugar
salt
pepper
Directions:
1. Heat oil in a large saucepan over medium heat.
2. Add onion and garlic. Cook, stirring frequently, 3 minutes.
3. Add remaining ingredients, except salt and pepper.
4. Bring mixture to a boil, then reduce heat to medium-low, cover and simmer 45 minutes.
5. Remove and discard orange peel before serving.
6. Add salt and pepper to taste.
