White been and Tomato Soup With Orange and Mint |

The oragne and mint work together to complement the tomatoes, and the beans add just the right amount of texture to this soup from Syria. Ingredients:
1 teaspoon olive oil |
1 cup chopped onion |
4 garlic, gloves crushed |
2 cups vegetable broth |
2 (16 ounce) cans tomatoes, chopped, undrained |
1 (19 ounce) can white beans, rinsed and drained |
orange peel |
1 teaspoon dried mint |
1/2 teaspoon sugar |
salt |
pepper |
Directions:
1. Heat oil in a large saucepan over medium heat. 2. Add onion and garlic. Cook, stirring frequently, 3 minutes. 3. Add remaining ingredients, except salt and pepper. 4. Bring mixture to a boil, then reduce heat to medium-low, cover and simmer 45 minutes. 5. Remove and discard orange peel before serving. 6. Add salt and pepper to taste. |
