White Beans Italian Style

Ingredients:
2 teaspoons olive oil
2 garlic cloves, minced
1/2 teaspoon dried sage
1 (16 ounce) can whole peeled tomatoes with juice, chopped, juices reserved
1 (19 ounce) can cannellini beans, rinsed and drained
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon fresh lemon juice or 1 teaspoon red wine vinegar
1 tablespoon finely chopped fresh parsley
Directions:
1. In a medium saucepan, heat oil. Add garlic and sage and cook until garlic softens, about 30 seconds.
2. Add drained chopped tomatoes and reserved tomato juice. Cover over medium heat for 5 minutes.
3. Add beans to saucepan. Season to taste with salt and pepper.
4. Simmer, uncovered, over low heat, stirring occasionally, until beans are hot, about 5 minutes.
5. Stir in lemon juice and parsley and serve.
