My family and friends love this soup, wonderful anytime of the year. Takes your taste buds in several different directions. Ingredients:
3 to 4 strips of bacon |
1 chopped onion |
1 chopped shallot |
1 to 2 cloves of garlic minced |
1 green or red bell pepper chopped into small pieces |
1 teaspoon of oregano |
dash of salt, dash of pepper |
2 cans of white beans drained |
1 can of whole corn drained |
1 can of beef broth |
1 can of evaporated milk |
crumbled feta cheese |
Directions:
1. Cut bacon strips into half inch pieces 2. In a large pot fry bacon until it begins to brown. 3. Add onion, shallot, bell pepper, garlic, salt and pepper. 4. While the veggies are sauteing, in a blender puree one can of white beans and half a can of corn, use a little olive oil to help with process if needed. 5. Reserve remaining corn. 6. Once the onions begin to brown add beef broth. 7. Add bean/corn puree, evaporated milk, second can of drained white beans and the remaining corn. 8. Add oregano. 9. Add milk to thin if desired. 10. Let soup simmer for about 20 mins 11. Ladle into bowls, crumble feta on top and serve. |
