Ingredients:
1 (15.5-ounce) can white kidney beans, rinsed and drained |
2 tablespoons fresh lime juice |
1/4 teaspoon salt |
1 plum tomato, diced |
2 scallions, finely diced |
20 corn chips |
Directions:
1. Combine beans, lime juice and salt in a bowl; mash with a potato masher until semismooth. Add tomato and scallions; stir to blend. Serve with corn chips. 2. On-the-Go Alternative: 1 package Nature Valley Oats 'n Honey Crunchy Granola Bars (2 bars). |
