Great summer salad. High in fiber, low in fat. Ingredients:
30 ounce cannellini beans, rinsed |
1 cup zucchini, diced |
1/2 cup tomato, diced |
2 tbsp fat-free italian dressing |
1 tsp red wine vinegar |
1 clove garlic, minced |
6 basil leaves, chiffonade |
4 cups spinach leaves, shredded |
1 fresh ground pepper |
Directions:
1. Combine all ingredients and toss. |
