This could be a light lunch or a side to a larger meal. Lots of protein and open for lots of variety. Ingredients:
2 c. drained white beans |
3 tbl. fresh squeezed lemon juice |
1/2 c. chopped flat-leaf parsley |
1 clove garlic, pressed |
2 tbl. extra virgin olive oil |
pinch of sea salt |
dash of fresh ground pepper |
4 c. fresh mixed baby greens |
Directions:
1. Mix all ingredients except greens, then serve on the greens. |
