White bean salad I serve at a barbecue. Easy prep and can be made ahead.
Ingredients:
2 (15 ounce) cans white beans, drained
1/4 cup lemon juice
3 tablespoons olive oil
1 garlic clove, minced
1/2 red onion, chopped
1/4 cup chopped parsley
Directions:
1. Mix all the vegetables together.
2. Whisk oil and lemon juice together and season with salt & pepper to taste.
3. Stir into vegetables and refrigerate.
