White Bean Ham And Tomato Soup |

I came across this rather healthy recipe on the side of a can of chicken broth. It sounds like something that would be great for a cold night when you are short of time. Ingredients:
2 cups diced onions |
2 tbsp olive oil |
48 oz can chicken broth |
28 oz can plum tomatoes, drained and diced |
2 (16 oz) cans white beans, drained and rinsed |
1 cup diced boiled or baked ham |
1/2 cup grated parmesan cheese |
Directions:
1. In a large heavy pot, over medium-high heat, cook and stir onions in oil for 4 to 5 minutes. 2. Add broth, tomatoes, beans and ham; heat to a boil. 3. Reduce heat and simmer for 25 to 30 minutes. 4. Stir in cheese just before serving. 5. ***Note: Another add in could be frozen, chopped spinach and a dash of nutmeg and or some small pasta such as ditalini! |
