White Bean Dip With Roasted Garlic Gremolata |

Gremolata is the traditional minced garlic, parsley and lemon peel garnish for the Italian veal shank dish osso buco. Here a roasted garlic version flavors pureed white beans. Accompany the dip with endive and radicchio leaves, carrot and fennel sticks, and snow peas or serve with pita chips or flat bread. Originally from a December 1989 Bon Appetit magazine in their Cooking Healthy section. Ingredients:
12 garlic cloves, unpeeled |
olive oil |
1/3 cup packed italian parsley, chopped |
2 inches by 3/4 inch strip lemon peel, chopped (yellow part only) |
1 (16 ounce) can cannellini beans, rinsed and drained |
3 tablespoons fresh lemon juice |
1 tablespoon olive oil |
1/4 teaspoon salt |
fresh ground pepper |
Directions:
1. Preheat oven to 400 degrees. 2. Place garlic in glass pie plate and drizzle with olive oil. 3. Roast until soft but not brown, about 15 minutes. 4. Cool slightly; trim ends and peel. 5. Mince parsley and lemon peel in processor. 6. Add roasted garlic, beans,lemon juice, oil and salt; season with pepper to taste. 7. Process until smooth and transfer to serving bowl. 8. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before serving.). |
