This unique color White bean, smooth textured chili, is both spicy and a surprisingly attractive dish rich in flavor with the Mascarpone cheese. Ingredients:
3 cups white northern beans |
3 cups water |
canola oil to coat pan |
2 tablespoons nutritional yeast |
1 tablespoon dried mushroom powder |
3 large onions rough chopped |
6 cloves garlic smashed |
4 oz baked teriyaki flavor tofu |
4 oz mascarpone cheese |
2 tablespoons sea salt |
1 teaspoon fresh ground black pepper |
3 tablespoons cumin |
1 tablespoon oregano |
1 to 2 tablespoons chipotle chile pepper |
2 oz each red and green bell pepper minced |
4 tablespoons salsa |
4 oz shredded queso blanco cheese |
6 tortilla chips crushed |
Directions:
1. In a sauce pan add enough canola oil to coat bottom of pan 2. On medium heat cook the onions and garlic until soft 3. Add the oregano, cumin, sea salt, fresh ground black pepper, Chipotle Chile Pepper 4. Northern Beans and the water and simmer for 20 minutes 5. to serve place some Grated Quesso cheese and the crushed tortilla chips in the bottom of each bowl 6. ladle 3 cups of Chile into each bowl 7. Place a dollop of Mascarpone cheese on top 8. Place a dollop of salsa on top 9. sprinkle a tablespoon of minced bell peppers for garnish 10. Serve |
