This recipe was emailed to me and I just wanted to put it in with my other recipes to try to keep them together. Beans you can start with about 1 qt of dry Norhtern Beans, soaking them overnight and cooking them the next morning, etc. Ingredients:
1 large chicken breast, skinless and boneless, cut into small pieces (approx. bite size) |
1/2 cup red hot sauce (or any other brand hot sauce) |
1 tablespoon lemon pepper |
32 ounces prepared northern white beans |
1 quart tomato, whole or crushed |
1 -2 cup cheddar cheese |
1 large yellow onion, chopped |
1 green pepper, seeded and chopped |
4 tablespoons lime juice |
2 teaspoons cumin |
2 teaspoons red pepper flakes, more or less depending on how hot you like it |
Directions:
1. Place chicken in small bowl. 2. Mix hot sauce and lemon pepper and pour over chicken, making sure to coat all pieces. 3. Marinate at least 2 hours Mix the rest of the ingredients in a large pot or crock pot and set at low heat. 4. Stir fry the chicken in a wok or skillet on high heat until the center of the chicken is no longer pink. 5. Stir the chicken into the chile. 6. Simmer on low at least 2 hrs, stirring occasionally. If using a crock pot, prepare the chile in the morning and cook on low all day.Can also prepare in a large covered casserole dish in the oven and bake it at 350 degrees for 1 hour. |
