White Bean & Basil Penne Pasta |

I found this recipe in my Health magazine and have made it a few times when I needed a quick dinner. It can be served as a salad or dinner and it is super easy - not to mention healthy! Ingredients:
1/2 cup whole grain penne pasta |
1/2 cup white beans |
1 cup chopped zucchini |
1/4 cup spaghetti sauce |
1/4 cup chopped basil |
1 teaspoon pine nuts |
Directions:
1. Cook pasta according to the direction, drain and set aside. Return pot to heat and add the beans, zucchini and sauce. Stir and top with chopped fresh basil and pine nuts. Voila! |
