White Bean and Tuna Salad Sandwiches |

A different, easy, light lunch. Ingredients:
1 (15 ounce) can cannellini beans, rinsed and drained |
1 (12 1/2 ounce) can solid white tuna in water, drained and flaked |
4 slices bacon, cooked and crumbled |
2 plum tomatoes, chopped |
1/4 cup chopped purple onion |
1/4 cup mayonnaise |
3 tablespoons fresh lemon juice |
2 tablespoons chopped fresh chives |
2 tablespoons dijon mustard |
1 teaspoon minced fresh dill |
salt and pepper |
sourdough bread, slices |
lettuce leaf |
Directions:
1. In a mixing bowl, mix together the first 11 ingredients; stir well to combine. 2. Cover and refrigerate for 1 hour. 3. Serve on toasted sourdough bread with lettuce leaves. |
