White Bean-and-Tuna Salad |

Stuff a whole wheat pita with this refreshing salad for a new way to enjoy tuna and beans. Ingredients:
2 tablespoons lemon juice |
1 tablespoon olive oil |
1/4 teaspoon salt |
1/2 teaspoon freshly ground pepper |
1/2 teaspoon dried oregano |
1 (20-ounce) can cannellini beans, rinsed and drained |
1 (6 1/2-ounce) can solid white tuna in spring water, drained and flaked |
4 green onions, thinly sliced |
2 tablespoons chopped fresh parsley |
lettuce leaves |
Directions:
1. Stir together first 5 ingredients. Add beans, tuna, and green onions, tossing gently to coat. Sprinkle with parsley, and serve over lettuce. |
