A wonderful soup with flavor and elegance.... Ingredients:
soup |
one tablespoon evoo |
one cup chopped onion |
one cup chopped carrot |
2 garlic cloves minced |
3 cups broth either chicken or vegetable |
2 cans cannelllini beans |
1 can diced tomatoes with juices.....(14.5 ounces) |
1/2 tsp dried oregano |
coarse salt and freshly ground black pepper |
orange gremolata |
1/2 cup packed italian parsley |
2 strips orange zest coarsely chopped |
2 garlic cloves |
garnish |
fresh parmesean cheese |
Directions:
1. Heat the oil in a large soup pot medium heat. 2. Add onion and carrot and stir to coat. 3. Cover and cook over low heat till veggies are tender about 10 minutes 4. uncover and stir in the garlic about two minutes uncovered 5. Add the broth, beans, tomatoes, and oregano and heat stirring occasionally 6. When mixture boils reduce heat to low.. cover and simmer for 10 minutes. 7. Salt and pepper to taste 8. Orange Gremolata 9. Gather the parsley, orange zest, and garlic on cutting board 10. finely chop the ingredients together 11. Ladle the soup into bowls ad top each with a generous portion of gremolata 12. top with fresh cheese |
