White Bean and Tomato Salad |

Another one from Everyday Food. I really like cannellini beans, I have found they make for a great, light lunch. This can be stored in the refrigerator for a day. Ingredients:
1 (14 ounce) can cannellini beans, rinsed and drained |
1 pint grape tomatoes, halved |
4 scallions, thinly sliced |
2 tablespoons olive oil |
1 tablespoon fresh lemon juice |
coarse salt & freshly ground black pepper |
Directions:
1. In a medium bowl, toss together beans, tomatoes, scallions, oil and lemon juice. 2. Season to taste with salt and pepper. |
