Tried and true. This is a very tasty and very comforting soup. Hope you enjoy as much as we did. WHITE BEAN AND SAUSAGE SOUP This recipe came from an estate sale. I obtained it when I purchased the family collection from the Smith Estate in Granbury, Texas in 1987. Ingredients:
1 tablespoon olive oil |
1 medium white onion chopped |
2 garlic cloves minced |
30 ounces canned great northern beans |
1 can chicken broth |
1-1/4 cup salsa |
1 teaspoon salt |
1/2 teaspoon pepper |
1 pound spinach leaves coarsely chopped |
1/2 pound kielbasa sausage halved lengthwise then cut in 1/2 pieces |
Directions:
1. Sauté onion in olive oil for 5 minutes then add garlic and cook 1 minute more. 2. Stir in beans, broth, salsa, salt and pepper then bring to a boil. 3. Reduce heat and simmer 15 minutes. 4. Stir in spinach and sausage and continue to cook 10 minutes more. |
