White Bean and Roasted Garlic Dip

Ingredients:
2 (15 1/2 ounce) cans white beans, rinsed and drained
2 tablespoons whole roasted garlic
3 tablespoons extra virgin olive oil
1/4 cup fresh lemon juice
salt and white pepper, to taste
1/4 cup fresh flat leaf parsley (to garnish)
Directions:
1. In a food processor, combine the beans, roasted garlic, oil and lemon juice and process until smooth. Season with salt and pepper. This will keep in an airtight container in the refrigerator for up to 3 days.
2. Tranfer to a serving bowl, garnish with the parsley leaves, and serve with your favorite vegetables for dipping.
