1/2 cup canned white beans (rinsed and drained) |
1 1/2 tablespoons pesto |
1 teaspoon lemon juice |
2 slices whole-grain toast |
2 slices jarred roasted red pepper |
Directions:
1. In a bowl, mash beans with pesto and lemon juice. Spread over whole-grain toast and top with roasted red pepper. |
