White Bean and Potato Stew |

Hearty stew for a cold day. DH loves the comforting taste. I usually serve with bread. It's pretty healthy besides the sausage. Ingredients:
2 tablespoons olive oil |
7 ounces smoked sausage (i prefer the spicy kind) |
1 medium onion, chopped |
2 (15 ounce) cans great northern beans (white beans) |
1 large baking potato |
6 -7 cups vegetable stock or 6 -7 cups broth |
1 teaspoon cumin |
1 teaspoon coriander |
salt |
pepper |
Directions:
1. chop sausage into small pieces. I usually slice them then cut into quarters. 2. heat oil on medium heat in large pot. 3. add sausage and cook until brown, about 5 minutes. 4. add onion, cook another 5 minutes. 5. add cumin and coriander, make sure to stir well. 6. meanwhile drain liquid from bean. 7. add stock or broth to pot, let come to a boil. 8. add beans and turn down to a simmer. 9. peel potato and cut into small cubes. 10. add potato to pot and let simmer for 30 minutes. 11. add salt and pepper to taste. 12. enjoy! |
