vegetable cooking spray |
1 cup chopped onion |
1 cup chopped sweet red pepper |
1/2 teaspoon black pepper |
1/2 teaspoon dried dillweed |
3 cloves garlic, minced |
4 cups canned no-salt-added chicken broth, undiluted |
2 (15-ounce) cans great northern beans, undrained |
1/2 cup peeled, chopped cucumber |
1/2 cup chopped green onions |
Directions:
1. Coat a large Dutch oven with cooking spray; place over medium-high heat until hot. Add 1 cup chopped onion, sweet red pepper, black pepper, dillweed, and garlic; saute until vegetables are tender. Add broth and beans. Bring to a boil; reduce heat, and simmer, uncovered, 20 minutes. Stir in cucumber and green onions. |
