White Bean and Asparagus Salad |

Make it a meal and serve with chicken breast strips or steak. Ingredients:
1/2 lb fresh asparagus, trimmed & cut into 1-inch pieces |
5 sun-dried tomatoes, chopped |
1 tablespoon garlic, minced |
1 tablespoon brown sugar |
2 tablespoons extra virgin olive oil |
2 tablespoons white wine vinegar |
1 tablespoon water |
1 teaspoon spicy mustard |
1/4 teaspoon dried rubbed sage |
1/2 teaspoon salt |
1/2 teaspoon pepper |
1 (19 ounce) can cannellini beans, rinsed and drained |
1/4 cup red onion, chopped |
1 (5 ounce) bag mixed salad greens |
1 tablespoon parmesan cheese, shredded |
Directions:
1. Steam asparagus and dried tomatoes for 2-4 minutes. Plunge asparagus in cold water, drain. 2. In a bowl wisk together garlic and next 8 ingredients; add asparagus, tomatoes, beans and onion, toss to coat. Cover and chill 1 hour. Serve mixture over salad greens; sprinkle with cheese. |
