I made these at Christmas once and everyone loved them. I had forgotten about this recipe until a clean out of the pantry where I found it in hidden amongst the old recipes. I remember it was so easy and a great sweet treat for after Christmas dinner. The size of the yield depends on the size balls you make. I have made the cooking time to iclude the refigeration of the truffles Ingredients:
100 g plain sweet biscuits, finely crushed |
1/2 cup shredded coconut |
1 tablespoon cocoa, sifted |
1/2 cup icing sugar, sifted |
1/4 cup sultana |
1/4 cup irish cream |
1 tablespoon water |
1 tablespoon honey |
shredded coconut, to decorate |
chocolate sprinkles, to decorate |
Directions:
1. Mix all ingredients together into balls. (Do not add the coconut and sprinkles at this stage these ingredients are to roll balls in). 2. Roll in coconut or choc sprinkles and refrigerate until set. |
