Ingredients:
1 cup raisins |
1/2 cup irish whiskey |
3 cups all-purpose flour |
1/2 cup sugar |
1 tablespoon baking powder |
1 teaspoon salt |
1 tablespoon grated orange rind |
1/2 teaspoon baking soda |
1 1/3 cups buttermilk |
1/4 cup butter or margarine, melted |

Directions:
1. Soak raisins in Irish whiskey overnight. 2. Combine flour, sugar, baking powder, salt, and orange rind in a large bowl; mix well. Stir in raisin mixture, blending well. 3. Dissolve soda in buttermilk; add to flour mixture, stirring well. Stir in butter, mixing well. 4. Spoon batter into a greased 2- quart casserole. Bake at 350° for 50 minutes or until golden brown. Cut into squares, and serve with Whiskey Butter. |
