Whiskey River BBQ Mini Meatloaf |

I love the Whiskey River BBQ cheeseburger so I adapted my favorite meatloaf recipe. The ranch is optional if you don't use it add 1 teaspoon salt. Original recipe, no ranch sub 1 teaspoon salt, topping: 2/3 c ketchup, 1/2 c brown sugar and 1 T mustard Ingredients:
1 egg |
3/4 cup milk |
1 cup shredded cheddar cheese |
1/2 cup oats |
1/2 cup onion, chopped |
1 lb ground beef |
1 ounce ranch dressing mix (optional) |
2/3 cup barbecue sauce |
french's french fried onions |
Directions:
1. In a bowl, beat egg and milk. 2. Stir in cheese, oats, onion and ranch. 3. Add beef and mix well. 4. Shape into 8 small loaves and place in a greased 9x13 baking dish. 5. Spoon BBQ sauce over loaves. 6. Bake uncovered at 350 for 30-45 minute or until meat is no longer pink. 7. Top with fried onions. |
