I wanted a quick but tasty mushroom appetizer for the Super Bowl and came up with this. You can use any fresh herb you have, really, or you can omit it. This only takes a couple hours to cook down and can stay in a warming slow cooker for another couple hours. Ingredients:
3lbs fresh white or baby bella mushrooms, whole |
1 onion, grated |
3 cloves garlic |
2 1/2 sticks butter |
1/2 cup whiskey |
1/4 cup worcestershire sauce |
several sprigs of fresh thyme, tarragon, rosemary, etc( i used tarragon) |
kosher or sea salt and fresh ground pepper |
Directions:
1. Add all ingredients to slow cooker. 2. Cook on low for 2-3 hours, until mushrooms are cooked down and hot throughout. It's okay to give these a few stirs. 3. Serve with a slotted spoon as an appetizer or a side for a steak dinner. 4. Don't let anyone eat the twigs of herbs! ;-) |
