Melt in your mouth whipped shortbread. The secret is beating the batter long enough to get the right consistency. Ingredients:
1 lb butter |
1/2 cup cornstarch |
3 cups flour |
1 cup icing sugar |
1 teaspoon vanilla |
Directions:
1. Cream butter well. 2. Cream in sugar, flour, cornstarch and vanilla. 3. Beat until the consistency of whipped cream. 4. Drop by spoonfuls on very lightly greased cookie sheet. 5. Bake at 300 degrees for 20 to 25 minutes until very lightly browned. |
