THIS SAVORY TWIST ON A THANKSGIVING OR CHRISTMAS STAPLE IS A NICE CHANGE FOR A HEARTY SIDE DISH. Ingredients:
2 pounds of yams cut into 1- inch slices |
1 teaspoon salt |
water for boiling |
1/2 cup packed brown sugar |
1 cup buttermilk |
1/2 cup coconut milk |
1 ( 20 ounce) can crushed pineapple in syrup not juice |
Directions:
1. IN A MEDIUM SAUCEPAN, PLACE YAMS AND ENOUGH WATER TO COVER, AND SALT. BRING TO A BOIL OVER HIGH HEAT AND THEN REDUCE HEAT TO A SIMMER UNTIL YAMS ARE SOFT AND CAN BE EASILY PIERCED WITH A FORK. 2. DRAIN, COOL AND PEEL YAMS 3. IN A BLENDER OR FOOD PROCESSOR, PUREE TOGETHER THE YAMS, BUTTERMILK,COCONUT MILK, BROWN SUGAR, AND CRUSHED PINEAPPLE. 4. PLACE IN A GLASS CASSEROLE DISH AND BAKE AT 350 DEGREES F. TO REWARM FOR 10 TO 15 MINUTES. |
