This was a recipe given to me at one of my bridal showers. It is the first thing I ever cooked that people actually raved about. My nephew won't even eat plain mashed potatoes, but he loves this recipe! My kids want to lick the bowl and spoon like it were cookie dough. Ingredients:
6 cups red potatoes, peeled and cubed |
8 ounces sour cream |
8 ounces cream cheese, softened |
1/3 cup chopped chives |
2 tablespoons butter |
salt and pepper |
Directions:
1. boil potatoes. 2. melt butter in a 2 quart baking dish. 3. beat sour cream, cream cheese, and chives in a large mixing bowl on low speed. 4. drain potatoes. 5. add potatoes to the mixture and beat at a gradually increasing speed until there are no lumps. 6. empty the mixture into the baking dish. 7. bake at 350 for 30 minutes or until slightly golden on top. |
