I've been making this recipe since I discovered butternut squash a couple of years ago. This is a nice substitute for regular mashed potatoes or sweet potatoes Ingredients:
1 butternut squash |
1/4 cup margarine |
1/2 cup light sour cream |
salt and pepper |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). 2. Slice top off butternut squash. Place whole squash in baking and bake in preheated oven for 1 hour. 3. Let squash cool. Cut in half to scoop out seeds and remove skin. 4. Place skinned squash into food processor with margarine and sour cream. Whip until smooth. Season with salt and pepper. |
