You'd never know a main ingredient in this pie is Ricotta cheese.....Definitely not a diet dessert....From Sconset Cafe on Nantucket Island, MA Ingredients:
crust |
1 1/2 cups graham cracker crumbs |
1/4 cup sugar |
1/2 tsp. nutmeg |
1/2 cup butter, melted |
filling |
2 1/2 cups ricotta cheese |
1 cup sugar |
1 tbls. almond extract |
1/4 cup amaretto liqueur |
1 cup toasted almonds, ground |
1 cup semisweet chocolate chips, ground |
1 cup heavy cream |
whipped cream to garnish |
shaved chocolate to garnish |
Directions:
1. Crust 2. Add all ingredients to mixing bowl and combine well 3. Press into 9 or 10 inch pie plate and freeze while making filling 4. Filling 5. In mixing bowl, mix Ricotta and sugar until smooth 6. Add almond extract and Amaretto and mix until blended 7. Stir in almonds and chocolate chips 8. In separate bowl, whip cream until stiff 9. Gently fold into filling 10. Freeze pie at least 3 hours before serving 11. If frozen over night, set out for 30 minutes or 1 hour in fridge before serving 12. Garnish with whipped cream and shaved chocolate |
