Dinner roll Ingredients:
all-purpose flour, 17 pounds |
whole wheat flour, 8 pounds |
white sugar, 3 cups |
salt, 1/4 cup |
dry milk, 3 cups |
yeast, 1 1/4 cup |
vegetable oil, 2 1/4 cup |
warm water, 1 3/4 gallons |
Directions:
1. Pour all dry ingredients into flour mixer with a dough hook and mix well. 2. Gradually add water and oil and mix until dough is smooth, about 10-15 minute. 3. Leave to rise in a warm place for 30 minute. 4. Get trays with lips on them and grease as many as needed to fit 450 Clementine sized rolls. 5. Tear off small pieses of the dough and rub them between your index finger and thumb so the dough is stretched and smooth. Shape the rolls - they should be just smaller then a Clementine and bigger than a golf ball - and place snugly on the trays. 6. Put trays in a warm spot untill the rolls doubled in size. 7. Bake in 350 degrees F oven until deep brown on top, be sure to rotate trays if oven heat is uneven. |
