Wheat Pilaf With Brussels Sprouts and Mushrooms |

Ingredients:
1 tablespoon butter (unsalted) |
1 tablespoon olive oil |
1/2 lb sliced mushrooms (shiitake and oyster) |
1/2 cup finely chopped red onion |
1 cup bulgur (preferably coarse) |
2 cups chicken broth (or vegetable broth, to make this dish vegan) |
1/2 lb brussels sprout |
1/4 cup packed fresh flat-leaf parsley |
1 teaspoon fresh thyme |
1/2 teaspoon salt |
pepper, and khmeli suneli |
Directions:
1. Sauté onions, mushrooms and quartered Brussels sprouts in oil and butter. Stir in bulgur, salt and pepper and sauté for a minute or two. Add boiling broth, fresh thyme and return to a boil. Cover and place in 350F oven for 20-25 minute Toss parsley, fluff the bulgur with a fork and check seasoning. |
