Wheat Germ Pancakes With Yogurt And Berry Sauce |

A healthy spin on an old time favorite. You can buy the wheat germ in health food stores,try to buy it in the raw form and keep it in the refrigerator. Ingredients:
pancakes |
1 c. whole- wheat pastry flour |
1/2 c wheat germ |
1/4 c. raw sugar |
1 1/4 c. buttermilk |
1/4 c. canola oil |
2 large brown eggs,separated |
oil for the griddle or skillet |
2 c.sliced bananas,berries,or raisins |
sauce |
1 pt. blueberries or other berries of choice, washed and dried |
1/4 c.raw sugar |
1 tbsp.lemon juice |
2 c. low or non fat vanilla yogurt |
Directions:
1. Pre-heat oven to 200F. 2. Pancakes: 3. Combine dry ingredients in a large bowl. 4. Mix buttermilk,oil and egg yolks in a cup. 5. Beat egg whites until stiff peaks form. 6. Mix the yoke mixture into the dry ingredients just until moistened and then fold in the egg whites. 7. Heat a non-stick (cast iron) skillet or griddle over medium heat until hot. 8. Lightly oil it and then drop 1/3 cup portions of the batter onto pan,spreading a bit if batter is thick. 9. drop in fruits and press them down with the edge of the spatula. 10. reduce heat to medium-low. 11. Cook pancakes until bubbly. 12. Flip them over and cook for a couple of minutes. 13. Transfer to an oven safe platter and hold until all pancakes are done. 14. Sauce: 15. For the sauce,mix the fruit,sugar,and lemon juice in a saucpan. 16. Heat over medium heat,stirring constantly,until it comes to a boil. 17. Remove from heat and add yogurt. 18. Sauce will thicken as it stands. 19. Serve pancakes topped with yogurt and berry sauce. |
