A slightly healthier version of a classic cupcake. Ingredients:
2 tablespoons oil |
1 egg |
1/2 cup white sugar |
1/2 cup brown sugar |
1 pinch salt |
2 teaspoons baking powder |
3/4 cup milk |
1 cup flour |
1/2 cup wheat germ |
1 teaspoon vanilla |
1/2 cup chocolate chips or 1/2 cup raisins |
Directions:
1. Preheat oven to 350°F. 2. In a bowl, mix oil, egg, white & brown sugars until smooth. 3. Add salt, baking powder, and milk. 4. Gradually add the flour and wheat germ. 5. Add vanilla and chocolate chips. 6. Mix. 7. Divide into 12 mini-loaf or muffin pans. 8. Bake 20 minutes. |
