This recipe has gluten in it, and nothing but whole wheat. I own a Bosch, so I don't knead it on a floured board. Ingredients:
7 c. whole wheat flour (i grind my own) |
2/3 c gluten |
2 1/2 t. yeast |
5 c hot water |
2 tbls salt |
2/3 c. oil |
2/3 c honey or 1 c sugar (i use honey) |
2 1/2 t. bottled lemon juice |
5 c. more wheat flour |
Directions:
1. Mix together the whole wheat flour, gluten flour, yeast and hot water. Hint: ( the hot water in this recipe will not kill your yeast) 2. Mix for 1-2 min. Cover and let stand for 10 min. 3. Add salt, oil, honey, or suar and bottled lemon juice. 4. Mix 1 min. 5. Then add up to 5 c more flour (I only add 4) 6. Knead for 10 min. 7. Preheat oven to warm. 8. Turn dough out onto oiled counter top and shape in to 4 loaves. 9. Put into oiled bread pans. 10. Place in preheated oven and let rise until dough is even with top of pan. 11. Bake at 350 for 30 min. |
