Wheat Berry Salad

Ingredients:
1 cup wheat berries
1/2 cup scallion, sliced
1/2 cup parsley, fresh and chopped
3 tablespoons dill, fresh chopped (or use basil)
dill sprigs (or basil leaves)
6 tablespoons olive oil
2 tablespoons balsamic vinegar
salt
pepper
Directions:
1. Cook wheat berries. Drain and cool.
2. Toss with remaining ingredients.
3. Serve on a bed of watercress or lettuce of some sort.
