This is a simple, healthy salad I put together for my brother's girlfriend. She's not vegetarian, but this ended up being a vegetarian dish, anyway. :) I call it fusion because by changing up a few of the ingredients, you can create the tastes you want. Read more . All the suggested ingredient options should go well together. Ingredients:
1/2 cup dry wheat berries |
4 cups water, stock, or a combo of both |
1/2 red onion, chopped |
1/2 cup canned beans, drained(black beans or cannellini beans) |
1 can seasoned diced tomatoes, drained(rotel style, italian, garlic and onion, etc) |
1 cup shelled edamame(from frozen, i don't cook, just thaw and shell) |
2t fresh herb(cilantro, parsley, basil, oregano) |
1/4 cup nuts(cashews, walnuts, pine nuts) |
1t vinegar(balsamic, red wine or rice) |
2t olive oil(you can add bit of sesame oil if you are going for a bit of the asian taste, but remember, it's strong, so use carefully!) |
favorite season salt blend with garlic, if possible, and black pepper |
Directions:
1. Add wheat berries to water/stock and bring to a boil. 2. Once boiling, reduce heat to simmer and cook about 1 hour or until preferred texture. 3. Drain well. 4. Combine all ingredients well and serve immediately. 5. Serve in bell pepper cups, if desired |
