A western omelet on a large scale, this a an easy way to please hungry fans of said omelet. Serves ten depending of the size of the appetites involved. Ingredients:
8 large eggs, separated |
1/2 cup all-purpose flour |
2 1/4 cups sour cream |
1 cup diced ham |
1 cup red pepper, diced |
4 ounces green chiles, drained and chopped |
1 teaspoon fajita seasoning |
2 cups sharp cheddar, shredded |
2 cups pepper jack cheese, shredded |
Directions:
1. Preheat oven to 325 Degrees F. 2. Coat 14-cup glass pan with cooking spray. 3. Whisk together egg yolks and flour. 4. Stir in sour cream, ham, red pepper, chiles and fajita seasoning. 5. Combine the two cheeses. 6. Beat egg whites to stiff peaks. 7. Fold egg whites into the two cheeses. 8. Fold the cheese mixture into the egg mixture. 9. Turn mixture into prepared pan. 10. Bake for 50 minutes. |
