Found this on a hand-written card in my mom's recipe box... Ingredients:
2 lbs round steaks, 1/4 in thick |
1/4 cup onion, chopped |
1/2 cup green pepper, chopped |
2 tablespoons oil |
1/2 cup barbecue sauce, smokey |
3/4 cup water |
salt, to taste |
pepper, to taste |
Directions:
1. Pound steaks to flatten; season with salt and pepper. 2. Cut each steak into 3 strips; sprinkle with onions and peppers. 3. Roll up beef enclosing peppers and onions; tie closed with string. 4. Heat skillet with oil to medium/medium-high heat and brown all sides. 5. Add BBQ sauce and water. 6. Cover and simmer 1-1 1/2 hours until tender. 7. Serve over egg noodles or rice. |
