WEST VIRGINIA MINT CUCUMBER FETA SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cabrera Estate in Malakoff, Texas in 1986. Ingredients:
2 medium cucumbers |
1-1/2 cups crumbled feta cheese |
1/2 cup chopped fresh mint leaves |
1/2 cup extra virgin olive oil |
1/4 cup fresh lemon juice |
1/4 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Peel half the skin off the cucumbers in lengthwise strips then cut into very thin slices. 2. Arrange slices on a serving platter then sprinkle feta cheese on top followed by the mint. 3. Whisk together olive oil, lemon juice, salt and pepper then pour over salad. |
