West African Fried Plantain

Use enough oil to cover the plantain slices at least halfway. Only half of the oil will be absorbed during cooking or even less.
Ingredients:
4 ripe plantains (brown-yellow in color)
1/2 cup canola oil (palm oil is traditional but fatty)
Directions:
1. Peel the plantains: cut the ends and then cut into the skin with a sharp knife. Slice into 1/2 inch thick shapes as desired (diagonal, round, slant oval, or cubed chunks).
2. Pour enough oil into skillet to almost cover slices. Heat up oil on medium high heat until hot.
3. Add plantain slices. Fry one side until brown (about 5-10 minutes) and then turn over with fork or slotted spoon to fry the other side.
4. Drain off oil and serve as a snack
