West African Egusi Soup- Melon Seed |

This humble melon seed soup is quite popular all over Nigeria. Although cooking techniques and the kind of vegetables used might differ from region to region it is still absolutely delicious when properly cooked. Serve with pounded yam, fufu or Gari Ingredients:
1/2 lb salted cod,fish (pre-soaked) |
300 g smoked dry mackerel |
1 lb chicken thighs |
2 cups water |
300 g melon seed, ground egusi |
600 g tomatoes, canned |
100 g scotch bonnet pepper |
1 large onion |
80 g dried shrimp |
500 g spinach |
2 cloves garlic |
3 tbs oil |
Directions:
1. Wash thoroughly the chicken. Place a large pot with sliced onions season with salt add 1 cup of water or stock and cook for 30 minutes or until tender. 2. Add the washed dry fish and saltfish and cook for another 10 minutes. When cooked empty into a large clean bowl. Wipe out the pot and place back on heat. Pour the oil into the pot when hot add the ground tomatoes onions and peppers and fry for 10 minutes. Add the ground egusi stirring thoroughly and cook for 5 minutes. Finally add cooked chicken & fish washed spinach leaf dried shrimp (crayfish) and the stock. Allow to boil then simmer for 15 minutes. Serve hot with any of the stiff puddings. |
