Was looking through my soup recipes and found this one..It's been a long time since I've made it and have to soon...A big bowl of comfort Ingredients:
2 whole boneless, skinless chicken breasts, cut into 1/2 inch pieces |
1 tbls. oil |
1 onion, chopped |
1 clove garlic, finely chopped |
1 28 oz. can whole tomatoes, undrained and cut up (i squish them in my hands to break them up) |
1 can great northern beans, undrained |
1 can of corn or 1 box frozen corn |
1 sweet potato, peeled and diced |
3/4 cup water |
1/4 cup creamy peanut butter |
1 tbls. tomato paste |
1 tsp. salt |
1 tsp. chili powder |
1/2 tsp. ginger |
1/2 tsp. cayenne pepper |
3 cups hot cooked white rice |
Directions:
1. In dutch oven, add oil and cook chicken until no longer pink 2. Add onion and garlic and cook until onion is tender 3. Add remaining ingredients except rice and stir until combined 4. Bring to boil 5. Reduce heat to medium low, cover and cook until sweet potato is tender...About 30 minutes 6. If stew gets too thick, add additional water 7. Serve over white rice 8. Serves 8 |
