A simple recipe using canned red kidney beans where you dont need to boil the beans. We enjoyed these on our fajitas. Ingredients:
1 (420 g) can organic red kidney beans |
1 small red onion, chopped finely |
1 garlic clove, chopped |
1 tablespoon fresh coriander, chopped |
salt |
Directions:
1. Drain beans and rinse. 2. Using a potato masher, roughly mash the beans. 3. Heat a frying pan with a little olive oil and gently fry the onions and garlic until just starting to brown. 4. Add beans and mix thoroughly. 5. Add salt to taste. 6. Stir through coriander and serve. |
