Wenatchee Applesauce Muffins |

Wenatchee, Washington is the apple growing center of the Northwest. More than 40% of our nation's appples are grown in this area. As a result, apple recipes are abundant. Ingredients:
2 cups unbleached flour |
1/2 cup brown sugar |
1 tablespoon baking powder |
1/2 teaspoon baking soda |
1 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
1/4 cup butter |
1 cup thick applesauce |
1/4 cup milk |
1 egg |
1/2 cup raisins |
1/2 cup walnuts |
Directions:
1. Heat oven to 425 degrees. Spray muffins tins. 2. In a bowl combine dry ingredients and blend. 3. Melt butter in saucepan. Turn off heat and stir in applesauce and milk. Beat in egg. 4. Stir applesauce mixture into dry ingredients and, when well-blended, stir in raisins and walnuts. 5. Bake 15-20 minutes, depending on size of muffin tin. Let stand for 5 minutes before removing from tins. |
