Welsh Rarebit Over Tomatoes And Toast |

Nothing says comfort food like tomato and cheese. Ingredients:
2/3 cup flour |
1 tsp. salt |
1/2 tsp. dry mustard |
1/8 tsp. cayenne pepper |
3 cups milk |
3/4 tsp. worcestershire sauce |
6 tbls. butter |
3 cups sharp cheddar cheese, shredded |
2 tomatoes, thinly sliced |
8 slices bread, toasted |
Directions:
1. Mix flour, salt, dry mustard and cayenne in mixing bowl 2. Add 1 cup milk slowly to form paste 3. Mix in rest of milk and Worcestershire sauce 4. Melt butter in double boiler 5. Slowly add milk mixture 6. Cook and constantly stir until mixture thickens 7. Slowly add cheese, stirring until melted 8. Put tomatoes on top of toast 9. Pour Rarebit over top of tomatoes |
