Oh, this is simple and good. Based on a recipe from my cookbook, Creative Cooking with Spices. Ingredients:
4 slices bread |
4 tablespoons unsalted butter |
8 ounces cheddar cheese, grated |
1/4 cup ale, the stronger the better |
2 teaspoons english mustard |
salt |
pepper |
Directions:
1. Toast the bread on both sides. 2. Melt the butter in a heavy saucepan over a low heat. 3. Add the cheese and ale, stirring constantly. 4. Add mustard, and salt and pepper to taste. 5. Spread on toast and grill or broil until browned and bubbling. |
