Another perfect late-night snack. When you don't want to call it a night, but you don't want to go out anymore either. Some in my family called this Welsh Rarebit. Ingredients:
1 tbsp. butter |
1 lb shredded sharp cheddar cheese |
1 tsp. salt |
1/2 tsp. dry mustard |
1/4 tsp. paprika |
tabasco (to taste) |
1/2 bottle beer (flat) |
1 egg yolk, beaten |
wheat toast |
Directions:
1. Melt the butter in the top of a double-boiler. 2. Add cheese and stir slowly, adding seasonings and beer. 3. Stir steadily, this needs to be smooth. 4. Add the egg yolk slowly to the hot cheese mix. 5. Have th etoast ready on hot plates, and pour the rabbit over. |
